This diabetic friendly recipe not only makes comfort food healthier but is a snap to prepare! It proves that following a diabetic meal plan doesn't have to be void of flavor.


Ingredients that you will need:

     3 tablespoons flour, divided

     1 1/2 teaspoons dried sage

     1 1/2 teaspoons dried rosemary

     salt to taste (not too much)

     pepper to taste

     1 1/2 pounds boneless, skinless chicken thighs or breasts (or combination of both)

     2 tablespoons olive oil

     20 garlic cloves, peeled and sliced

     1/4 teaspoon crushed red pepper flakes

     1 onion chopped

     1/2 cup dry white wine

     1 1/4 cup low fat, reduced sodium chicken broth

     1 tablespoon butter softened

     3 tablespoons chopped parsley


You read it right, there are 20 cloves of garlic in this meal but it is very mellow and comforting. This dish is wonderful served over cooked egg noodles, rice, or all alone! You may want to double the sauce as it is so tasty!


1. Preheat the oven to 325° F. Combine 2 tablespoons of the flour, all of the sage, rosemary, salt, and pepper on a plate or dish.


2. Dredge the chicken through the flour mixture and shake off the excess.


3. Heat the oil in a large skillet over medium high heat. Add the chicken to the pan and cook for approximately 4 minutes per side. Transfer to a baking sheet and continue to cook in the preheated oven for about 25 minutes or until the chicken is cooked through.


4. Meanwhile, add the garlic, red pepper flakes, and onion to the pan and saute until the garlic begins to brown.


5. Stir in the wine and scrape up the browned bits. Add the chicken broth and boil until the liquid is reduced by half, about 8-10 minutes. Remove from the heat source.


6. Whisk together the softened butter and remaining 1 tablespoon flour and add to the pan and whisk very well. Return the pan to the heat source and cook until the sauce thickens. Pour the sauce over the chicken, sprinkle with parsley and serve.


Remember to double the sauce ingredients! You won't be disappointed!
